Fruit & Flower salad

Beautiful flowers, I think, are just waiting to be eaten and enjoyed.  Choose carefully, though, as some will bite back!  The ingredients for this one were all waving themselves under my nose this morning, whilst I was watering them.  So – for one hungry mortal –

Ingredients

  • 1 handful of mixed leaves (I used rainbow chard and flat leaved parsley)
  • 1 pink lady apple, chopped
  • 2 cherry tomatoes, chopped
  • 1 satsuma, peeled and segmented
  • 1 tablespoon flaked almonds
  • 1 tablespoon raisins
  • 1 calendula head, de-petalled
  • 2 pansy heads, de-petalled
  • oil, cider vinegar & grainy mustard dressing

Method

Toss everything together in a bowl, add dressing, toss again & serve.
