Carrot, Apple and a Decadent Dressing


Just how far was I prepared to go?

Well try this one for size.


  • A few lettuce leaves

Good – that’s the boring bit over and done with.

  • 1/4 fennel,  finely sliced
  • 1 apple,  finely sliced
  • 1 carrot, grated
  • a few olives, sliced
  • 1 hard boiled egg
  • olive oil, cider vinegar dressing

Decadent dressing:

  • 1 tablespoon olive oil
  • 1 teaspoon runny honey
  • 1/4 teaspoon grainy mustard
  • 1 tablespoon hummus


Put the lettuce, fennel, apple and olives in a bowl and toss with the olive oil and cider vinegar dressing.  Pile onto a plate.  Sprinkle the grated carrot on top.  Whisk together all the ingredients for the decadent dressing and drizzle this over the carrots.  Slice the hard boiled egg and arrange on top. Now just eat and enjoy.
