TOMATO, MOZZARELLA and NECTARINE……(plus few extra bits) SALAD
Now I LOVE tomato and mozzarella salad but sometimes the old taste buds crave for just a little something extra. So there I was, rummaging around in the fridge and here is the result……
- 1 handful of watercress
- a few leaves of Little Gem lettuce
- 1 plum tomato, thinly sliced
- 1 ripe nectarine, thinly sliced
- 6 slices mozzarella
- good, tasty olive oil, cider vinegar, grainy mustard dressing
Now the trick to making this absolutely delicious is USE ENOUGH DRESSING. Forget the waistline – this needs oodles of the luscious stuff.
Rip up the watercress and lettuce, toss in a small amount of the dressing and pile onto the plate. Put a layer of tomato on top, then a layer of nectarine then a slice or two of mozzarella. Pour a liberal amount of dressing over this. Repeat this layering process until you have a mountain in front of you. Add an extra drizzle of dressing for luck, sprinkle sumac on top then try to work out how to eat this edifice without getting very, very messy.
